This super-sized bag is for those who love to use cacao nibs in a variety of ways and need plenty to hand for their cooking, baking and snacking. They can be ground down in a coffee grinder to make the base for Hot Chocolate or a powder that can be combined with Cacao Butter for Raw Chocolate making. The nibs allow you to obtain a freshly ground flavour for your cooking.

These cacao nibs are raw rather than roasted. They are crunchy, just like roasted nibs, and can be used in exactly the same types of recipe. However, raw nibs retain more of the original oils and natural flavonoids. The term "cacao nibs" tends to be used to refer to these raw cacao nibs, whereas "cocoa nibs" tend to be the roasted ones, but there are no strict definitions and, for all intents and purposes, they are the same thing.

Directions

Cacao nibs can be used in a wide variety of recipes. They can be broken into smaller pieces in a mortar and pestle and mixed into chocolates for a more intense flavour. They can be ground into a fine powder and used as a rich form of cocoa powder (normal cocoa powder is made from nibs like these, but many of the natural oils are removed during processing) and used in cakes, confectionery, biscuits and hot chocolate drinks. Or the nibs can be sprinkled straight into desserts, or even onto your morning muesli. You can also mix these nibs with seeds, berries (such as goji berries) and other dried fruits to make a delicious trail mix. The sweetness of the berries provides an excellent counterpoint to the bitterness of the nibs - making for a delicious flavour combination. Try it!
