Millet flour can be mixed with other flours including rice flour and tapioca flour, to make a great wheat-free bread flour blend.
Use millet flour to make flatbreads. The bajra roti is similar to a chapati, but made with millet flour. Simply mix millet flour with water to make a dough. Roll into balls, then flatten each ball with a rolling pin to form a thin roti (about 3mm thick). Heat a frying pan and add a very thin layer of coconut oil before cooking each side for 2 minutes.
