Chickpeas are a popular component in Mediterranean, North African and Indian cuisine. They can be used in curries, soups and salads. They can be stewed with meats like chicken and fish. These chickpeas are also the main ingredient of hummus (a creamy dip made from chickpeas, tahini, garlic, oil and lemon juice). Chickpeas also make tasty side dishes. They could be mixed with cous cous or tiny grains like quinoa or amaranth then dressed with oil and spices.
Directions
Cooking: Cooking times for these chickpeas vary depending on the method used. The most popular method is to soak them overnight (for around 10 hours or more) and then to boil them in a large pan of water for around 2 hours. You can also cook them in a pressure cooker, which will take only around half an hour, and there is no need to soak the chickpeas beforehand when using a pressure cooker.
Sprouting: These chick peas can also be sprouted. Use a germinator jar for best effect, or simply use a tray with a clear lid. These chick peas will sprout and be ready to eat, without cooking, in around 3 to 5 days. Add them to salads for extra taste and protein!
