  • Rinse the dried chickpeas under cold water until the water runs clear.
  • Add the chickpeas and water to a large saucepan.
  • Bring the water to a boil over high heat.
  • Reduce the heat to low, cover the pan, and simmer for 1-2 hours, or until the chickpeas are soft and cooked through.
  • Drain any excess water and use the chickpeas in your favourite recipe.

Soaking the chickpeas overnight will shorten the cooking time. To do this, rinse the chickpeas and then place them in a bowl with enough water to cover them by 2 inches. Soak the chickpeas for at least 8 hours, or overnight.
