Soy Bean Miso is known as
hatcho miso in Japan, and has a higher soya content than other misos. It is a strong, dark, savoury miso designed for adding flavour to dishes. It is often mixed with a lighter miso.

Hatcho miso is a strong miso and can be used in red meat dishes such as beef ramen. It also works well as a general-use flavouring for stir-fries and
noodle dishes.
