• In curries: Crush before use with a mortar and pestle or rolling pin. Add to hotter curries for a more fiery heat.
• In general cookery: White peppercorns lift the flavour of sauces, soups and casseroles, with a little more heat than black peppercorns.
• Toasting before use? Toasting these peppercorns in a hot frying pan just before use will further intensify the flavour. However, they are fine to use without toasting.
