Mung beans provide the body with an excellent source of protein and fibre. When sprouted, the bean shoots contain Vitamin A, B vitamins and Vitamin C, as well as Iron, Magnesium and other minerals.
Mung beans cook for a shorter length of time than the directions suggest and are usually tender within 30 minutes when added straight to boiling water.
