Directions
- Use green cardamom pods to flavour Indian desserts such as kulfi and barfi. As the cardamom pods are used as a flavouring, the whole pods are usually added while the ingredients are being cooked or mixed, and strained out later.
- Green cardamom pods are often added to light Indian curries. The whole pods can usually be left in.
- Use these green cardamom pods in tea blends, including "chai masala": a blend of tea, cardamom, cinnamon, cloves and other spices.
