Yerba Mate Leaves
The dried leaves of the
Ilex paraguariensis (South American Holly) are more commonly known as Mate or Yerba Mate and are used to make a stimulating tea. The Yerba Mate leaves contain caffeine and similar naturally occurring compounds, so unlike many herbal teas, this brew will certainly not be caffeine-free! This is a bitter-sweet drink that coffee lovers might feel drawn to because of this.
Try making a flavoured blend by adding other loose herbs and dry ingredients e.g.: Peppermint, Lemon Peel or Apple for a drink suited to morning time and when you want to feel awake and refreshed.
- A morning time infusion that stimulates in a similar way to coffee.
- Add the crushed leaves to various recipes as a pick-me-up.
