Millet Amazake is a special ingredient with the pleasing texture of a pudding. It is a very simple food made just from cultured rice, water, millet and a little sea salt. The cultured rice converts the carbohydrates from the millet into simple sugars, which make it naturally sweet.
In Japan this paste is often used to make a warming drink, a little like the malted milky drinks found in the UK. Millet Amazake can be eaten straight from the jar cold or gently warmed for a porridge-like breakfast. Children may also enjoy it because of sweetness and equally millet grain is easy for most children to digest.
