Brown mustard seeds are typically used in Indian curries. The seeds are added whole to dishes such as sag aloo, a potato and spinach dish typically served as a side dish: the seeds are added to the hot oil and fried for 30 seconds before adding the rest of the ingredients. Mustard seeds can also be crushed before adding to curries, or as part of a spice mix.
Brown mustard seeds are also used to make mustard. They can be mixed with yellow mustard seeds as desired, and can also be used crushed or uncrushed. Mustard is typically made by crushing the mustard seeds before adding vinegar or lemon juice and water. You can make a "posh" mustard by leaving around half of the seeds uncrushed and having a mixture of brown and yellow mustard seeds.
