This essential oil comes from a the green citrus fruits of a small tree [Citrus bergamia] mostly found growing in Italy. It is the same citrus peel from the fruit that is used to flavour Earl Grey Tea and Lady Grey Tea. The oil would work well in cool summer drinks and cocktails as well as jellies, granitas, ice-creams and other cold puddings.
The bergamot flavour is highly concentrated so only one or two drops are required in cooking. For best results add to wet ingredients such as water (in the case of jelly), butter/oil, egg or milk in order to disperse the oil evenly.
