Asafoetida is an Indian flavouring, made by drying the sap of the
ferula assafoetida plant. It has a strong flavour and is used in Indian curries, chutneys and pickles.
Directions
Asafoetida has a distinctive flavour, and depending on your point of view, it tastes like a combination of onion, garlic, vegetables and general herbs. It has a strong flavour when raw, but once cooked has a pleasant sausagey aroma.
Add a pinch of asafoetida to general curry-type meals and preserves, very early on in the cooking process in order to bring out the full flavour as the meal cooks. Also add it to meat marinades.
This is a mild powder, with the asafoetida powder mixed with flour and turmeric for a more well-rounded flavour.
Ingredients:
Rice flour, gum arabic, asafoetida, turmeric, wheat flour.
