Meet tofu’s weird-but-cool cousin, tempeh. It gets along great with a tasty marinade, like this Smoky Maple Bacon–style sauce.

HOW TO MAKE: Stovetop: Heat 1 to 2 Tbsp oil in a pan (cast iron is best). Add tempeh strips to hot oil and cook 1.5 to 2 minutes on each side until nicely browned. Delicious for breakfast, in a salad, or in a BLT.
