These skinny soba style noodles from Japan are perfect for a light lunch dish. They are slowly air dried which helps mature their flavour. They are not quite as thin as vermicelli and are thicker than spaghetti. They are quick to cook (3 minutes) and will complement the flavour of miso soup as well as chicken, pork and other meat dishes. They eat well either hot or cold.
