Ground cassia has a much stronger taste than cinnamon, though there are also sweet undertones to its flavour. This makes it a great substitute for cinnamon in more savoury recipes, such as curries or as a pre-cooking rub, where a more potent flavour is desired. Cassia is used in an array of Thai and South East Asian recipes, as well as plenty of Western baking. It is incredibly versatile.
Cassia can be combined with other spices like ginger and cloves, to flavour cakes, pastries, milk puddings and spice blends. It can be used to top porridge and other warm breakfast options to add a kick of flavour. Cassia can also be sprinkled on top of hot drinks, such as coffee or hot chocolate, or added to a mulled wine.
