Butter beans are a large hearty pulse that is full of protein and soluble and insoluble fibre. They become soft when cooked with a creamy centre.
Soak for 8 hours (or over night). When you are ready to cook, add to boiling water and leave to simmer. They should be ready in an hour (or remove from heat when tender). A pressure cooker will cook butter beans within 15 - 20 minutes.
