These beautiful olives are hand-picked from hundred-year-old olive trees located on the grounds of the Ormylia Halkidiki Monastery. The curing and preparation process is 100% free from any chemicals. It is done with sea salt and water only... and time - a laborious process of over 14 months. It dates back 4000 years; it is the original method to take the bitterness out of the olives and give them their unique flavour and firmness.
