Premium Sicilian Pine Kernels

These pine nuts (kernels) are from the European Stone Pine, and are extremely hard to find in Britain because most pine nuts sold in the UK are grown in Asia from the Korean Stone Pine. They have a noticeably richer flavour and more buttery texture than the Asian nuts, which are harder and not as good. These Italian pine nuts are truly premium quality.

These particular pine nuts are organically grown under the southern Italian slopes of Mount Etna on fertile volcanic soil. The kernel has a more elongated shape than those grown in China. They are soft and the flavour is creamy, sweet and delicate. They can be eaten straight from the packet or alternatively the pine nuts can be sprinkled onto a non-stick pan and gently toasted over the heat from the stove.

These unroasted kernels are so soft they can easily be squashed with the back of a spoon! Or if you require a more even result, then the pine nuts can be ground down with a pestle & mortar or in a coffee grinder. The result will be a paste ideal for making home made pesto.
