Out of all the lentils, Green lentils keep their firm shape well after being cooked, adding texture (something more to chew on) to a dish. Green lentils would compliment saucy and spicy dishes. They would work alongside dark meats like beef or duck and chunky root vegetables and squashes such as pumpkin, butternut squash and potato.
Directions
Place in a saucepan with a lid and cover with 3cm of boiling water (from the kettle) for 25-30 minutes, adding spices if necessary. The lentils will absorb the water. Serve and enjoy!
