Ceylona Cinnamon Quills are very delicate - often referred to as "true" cinnamon. They are much finer and sweeter than Chinese cinnamon (cinnamon bark), though are still suitable for both sweet and savoury cooking.
Uses
Cinnamon sticks/quills can be used to make warming winter drinks like mulled wine, mulled cider and herbal tea. They also make delicious flavourings to cream, custard, sauces and other puddings. This is not too sweet for savoury meals either, and can be incorporated into curries or flavouring rice.
Simply break the whole cinnamon into your dish/drink and allow the flavours to infuse. When serving, you may find it preferable to remove the whole cinnamon.
