These udon noodles from Japan are perfect for adding to soups and broths. They are slowly air dried which helps mature their flavour. The noodles are wider than linguine (around 3mm), but slimmer than tagliatelle. They are quick to cook (9 minutes) and will compliment the flavour of miso soup as well as chicken, pork and other meat dishes. They eat well either hot or cold.
