This amber coloured runny honey is produced by cold filtering and extraction. This helps to maintain the natural proteins and enzymes contained in the honey. It has a smooth, rich flavour reminiscent of the old-fashioned barley-sugar boiled sweet!
Manuka honey is produced by bees who harvest nectar from the blossoms of the Manuka Tree [Leptospermum scoparium] in New Zealand. The shrub-like tree is sometimes known as the Manuka Myrtle or New Zealand Tea Tree. It has mild anti-bacterial/anti-microbial properties, which is why it has become popular.
Manuka honey can be used in just the same way as regular honey, for example in porridge, yoghurt and herbal tea.
