Maitake mushrooms are a particularly flavoursome mushroom from the species Grifola frondosa. They are eaten in many parts of the world but are particularly popular in Japan. Maitake is highly nutritious, being rich in minerals and B-vitamins, as well as a number of amino acids and phytochemicals that have been shown to have health benefits.
These dried maitake mushrooms are ideal for any type of food, and particularly Japanese food of course. They have a really excellent firm texture and a distinctive flavour that is not too strong.
Use maitake mushrooms in stir-fries or soups (including ramen). They have a very firm, almost meaty texture that works well with noodles or vegetables.
Soak maitake mushrooms for around 20 minutes to half an hour in lukewarm water. At this stage, they will have a very strong aroma indeed, but this will calm down once they are cooked. Add the mushrooms plus the soaking-water to the stir-fry or soup and cook for 5-20 minutes depending on preference.
