- Yellow, ground cornmeal.
- Becomes creamy and smooth when boiled and cooked down.
- Cornmeal is also an ingredient of some flat breads and cornbreads.
- Sometimes cornmeal is combined with wheat flour, buckwheat flour or chestnut flour in polenta recipes.
- Gluten free.
Polenta is a dish cooked in both Eastern and Western cultures. It is a great accompaniment to fish, meat, mushroom cheese
, and can be seasoned after its cooked with pepper, lemon or spices
Depending on the method used and the sort of outcome you want, cooking polenta can take a long time. Smooth, liquid polenta is served hot alongside meat or vegetables. For firm polenta, leave the creamy mixture to cool. Cool polenta is then cut in to strips or shapes. It works well with salads but firm polenta can also be fried.
Cornmeal can also be used in other dishes and breads.
