Chanterelle mushrooms are highly sought-after. The irregularly-shaped mushroom is used in a variety of styles, predominantly European but also in the East. These dried organic chanterelles from Tropical Wholefoods are produced by farmers in Zambia. The drying process is traditional with Chanterelle mushrooms, because it is the best way to develop the intense flavour of the mushroom. Simply add water to rehydrate.
Directions
Reconstitute the mushrooms in water for about 20 minutes before cooking. You can use the same water in your cooking, as it will be mushroom-flavoured too. If you are making soup, you can just add the mushrooms directly to the soup without having to reconstitute first.
