Sumac, also known as sumaq or sumach, is an African and North American flowering shrub. It produces a fruit which is ground down to make the
reddish coloured sumac spice.
Sumac has a flavour similar to lemon and therefore may be used as a lemon substitute in many savoury dishes. It is famously used in kebab seasonings but can be applied to any marinade or meat rub. It also makes a tasty garnish when sprinkled on to salads or dips such as hummus.
