This mackerel is known as Southern Mackerel (scomber colias) and is fished by small locally owned boats off the coast of Portugal where it is transformed for us to our own exacting recipe. Because this mackerel is meatier and less oily, we cut it into special filets. We searched high and low for the right mustard and found it with a distinctive and colourful grain mustard.
