Gingerbread Men

  • 80g vegan butter/margarine
  • Icing pens to decorate, along with your favourite edible decorations.


  1. Preheat the oven to gas mark 5. Line a baking tray with baking parchment.
  2. Sift the flour, bicarbonate of soda, salt, ginger powder, ground cloves, cinnamon, nutmeg and baking powder into a bowl. Set aside for later.
  3. In an electric mixer, beat together the vegan butter, coconut oil, coconut sugar and vanilla extract.
  4. Set the mixer to a medium speed and add the egg replacer, followed by one tablespoon of the flour mixture.
  5. With the mixer still running, add the molasses and the vanilla extract.
  6. Gradually add the flour mixture, until you have a reasonably stiff dough.
  7. Wrap the dough in clingfilm and refrigerate overnight.
  8. When you are ready to use the dough, lightly flour a work surface and remove the dough from the fridge.
  9. Roll out the dough until it reaches a 1cm thickness. Cut out as many gingerbread men shapes as you can. Place on the prepared baking tray and bake for about 8 minutes.
  10. Allow to cool on the baking tray for a minute or two, before transferring to a wire rack to cool completely. When cool, ice on your own design with your favourite coloured icing.
