No-Bake Dark Chocolate Flapjacks 🍫
When August temperatures rise, the last thing you want to do is turn on the oven! Enter these wonderfully chewy, no-bake dark chocolate flapjacks. Packed with plump jumbo oats, vibrant dried fruit and a crunch-boosting mix of pumpkin, sunflower and chia seeds, they’re naturally sweetened with caramelly Medjool dates and rich cacao powder. Finished with a lush dark chocolate drizzle, they set firm in the fridge and keep for a whole week making them the ultimate cool, energising treat for warm summer days.

70g dark chocolate (for drizzling)
Method
- Blitz the pitted Medjool dates in a food processor until a sticky paste forms.
- Warm the date paste, coconut oil and maple syrup in a pan over low heat until melted and smooth.
- In a bowl, toss together the jumbo oats, cacao powder and pink salt. Pour in the warm date syrup and stir well to coat.
- Stir through the seeds (pumpkin, sunflower, chia) and chopped dried fruit (cranberries, apricots) until evenly distributed.
- Pack the mixture firmly into a lined square baking tin using a spoon or glass. Chill in the fridge for 1 hour.
- Melt the dark chocolate, drizzle over the chilled top and chill for another 30 minutes to set. Slice into squares and keep stored in the fridge!
