Tiny, speckled and grey-brown, Organic Chia Seeds swell into a gel when they meet liquid, and that is what makes them useful in the kitchen. Stir two tablespoons into milk or a plant drink and leave overnight for chia pudding, or blend them into smoothies and porridge. Soaked chia also stands in for egg in vegan baking, roughly one tablespoon of seeds to three of water per egg. The seeds are ready to eat as they come, sprinkled over cereal, yoghurt and salads, and they bake into bread and crackers, soaked for 30 minutes first so they stay moist during cooking. The flavour is mild and faintly nutty, so it disappears into whatever it joins.
Key points:
- Soak 30 minutes before baking into bread so the seeds stay moist
- Sprinkle straight from the pack over cereals, porridge and salads
- Certified organic. Packed in Sussex
- Store sealed in a cool, dry cupboard
