Gingerbread Goji Snack Balls

  • Makes 14-16 bite-sized balls.

  • Good for lunchboxes – gojis can be omitted for young kids.

    Method

    1. Grind the Medjool dates (stones removed!), sunflower seeds and coconut oil in a mini blender or powerful smoothie maker with a grinding blade.
    2. Add the sultanas and blend again. Don’t worry if some of the sultanas remain whole this is fine.
    3. In a large mixing bowl add the ground almonds, ginger power, allspice powder and banana powder. Mix well.
    4. Add the coconut syrup and the fruit paste and mix with a fork. Bring the mixture together into a dough ball.
    5. Then gradually knead in the goji berries. You may find that you can only add 25-30g of Gojis depending on their size. You judge according to taste.
    6. Use a dessert spoon to roughly divide the mixture into bite sized amounts and roll into balls.
    7. Store in an airtight container in the fridge until ready to eat. The balls can be stored this way for a week or so.
