Chickpea Quinoa Salad

Other Ingredients

  • cucumber
  • tomato
  • red onion
  • yellow pepper
  • fresh spinach or other greens
  • parsley

Method

  1. Cook your chickpeas and quinoa.
  2. In the meantime, chop your vegetables into desired shapes.
  3. In a little bowl mix olive oil with lemon juice, salt, pepper and chilli flakes if you like spicier food.
  4. Mix all ingredients together in a big bowl.
  5. Serve and enjoy!
