Fresh Spring Rolls with Peanut Dipping Sauce

  • Fresh vegetables – we used carrots, cabbage, cucumbers, chives.

Method

  1. First, marinate your tofu. In a small bowl, mix 3 tbsp soya sauce, 1.5 tbsp maple syrup and 1 tbsp rice vinegar. Slice your tofu and place in the marinade. Leave to stand for about 15 minutes, making sure to turn your tofu after 5 minutes so it’s marinaded on both sides.
  2. Heat 1 tbsp of oil in a frying pan on medium heat and fry your tofu on both sides.
  3. Add your marinade and fry your tofu on both sides again until all the liquid reduces, forming a nice sticky layer around your tofu. Sprinkle it with sesame seeds and cut into strips.
  4. Cut your vegetables into strips. Chop your pickles if you’re using any.
  5. Fill a shallow tray with hot water. Place a pancake in the hot water until it is pliable (about 15-20 seconds).
  6. Remove the pancake and place it onto a plate. Place the filling (vegetables and tofu) in the middle and fold the pancake.
  7. Make your dipping sauce. In a bowl, put peanut butter, 3 tbsp soya sauce, 2 tbsp maple syrup, 1 tsp vinegar, 50ml water and 1 tsp garlic powder.
  8. Mix until you reach a smooth, creamy consistency. Sprinkle with crushed peanuts.
  9. Serve your fresh rolls with peanut dipping sauce!
