Vegan Nuggets

  • These amazing vegan nuggets are a fantastic fakeaway idea.
  • They are very easy to make and taste fantastic served with your favourite dip.
  • Full of protein thanks to added tofu!
  • You can add more chilli if you prefer a more spicy flavour.

Other Ingredients

  • 1 L water

Method

  1. Boil 1L of water with 1 tbsp bouillon powder.
  2. Place tofu, 225ml soya drink, 1 tsp garlic powder, 1 tsp onion powder, 3 tbsp yeast flakes, and 0.5 tsp salt in a blender and blend until smooth.
  3. In a big mixing bowl, mix 200g gluten and 3 tbsp chickpea flour. Add in your tofu mix and work the dough with your hands for about 1 minute.
  4. Cut your dough into a nugget shape and place it in boiling water. Wait for your nuggets to float on the surface, remove them from the pot, and place them on a sieve.
  5. Place corn flakes in a blender and blend for 3 seconds to get rough crumbs.
  6. Prepare 2 mixing bowls. Mix 250ml soya drink and 3 tbsp chickpea flour in one and cornflake crumbs, 150g flour, turmeric powder, chilli powder, nutmeg and 0.25 tsp salt in the 2nd bowl.
  7. Dip your nuggets in a soya drink and flour mix first, then dip it in the cornflake & flour mix. Coat well.
  8. Prepare a big frying pan. Place it on medium heat and add a generous amount of oil (we’re deep-frying our nuggets). Fry your nuggets on both sides until golden brown and crunchy.
  9. Enjoy with your favourite dip!
