Pumpkin Seed Bars

These no-bake pumpkin seed bars are the ultimate nutrient-dense snack for when those mid-afternoon cravings hit. Packed with crunchy pumpkin seeds and naturally sweetened with chewy dates and a touch of maple syrup, they offer a brilliant balance of healthy fats and natural energy. The smooth peanut butter base provides a rich, creamy texture, all finished with a decadent layer of dark chocolate. They’re gluten-free, vegan-friendly and much more flavourful than anything you’ll find in the supermarket aisles!

Method

  1. Roughly chop the pumpkin seeds and the dates.

  2. Combine the chopped seeds and dates in a bowl with the peanut butter, salt and maple syrup.

  3. Mix everything together thoroughly until well combined.

  4. Transfer the mixture to a container, smoothing it into an even layer and place it in the freezer for 30 minutes to firm up.

  5. Melt the chocolate using a water bath (bain-marie) or in short intervals in the microwave.

  6. Layer the melted chocolate evenly over the chilled pumpkin mixture.

  7. Place in the fridge until the chocolate has completely set.

  8. Slice into bars or squares using a sharp knife.
