Pumpkin Seed Bars

140g Pumpkin Seeds
Organic Dried Dates 1kg (Sussex Wholefoods)
100g Dates
Organic Peanut Butter Smooth without Salt 250g (Biona)
100g Peanut Butter
Buckwud Canadian Maple Syrup 250g (Rowse)
50g Maple Syrup
Fine Pink Himalayan Salt 1kg (Sussex Wholefoods)
a pinch of salt
70% Dark Chocolate 90g (Divine)
90g Dark Chocolate
Method

Roughly chop the pumpkin seeds and the dates.

Combine the chopped seeds and dates in a bowl with the peanut butter, salt and maple syrup.

Mix everything together thoroughly until well combined.

Transfer the mixture to a container, smoothing it into an even layer and place it in the freezer for 30 minutes to firm up.

Melt the chocolate using a water bath (bain-marie) or in short intervals in the microwave.

Layer the melted chocolate evenly over the chilled pumpkin mixture.

Place in the fridge until the chocolate has completely set.

Slice into bars or squares using a sharp knife.
