Vegan Protein Bars

Method

  1. Chop your almonds into fine pieces (you can also grind them if you prefer).
  2. Blend 60g of oats in a blender until you get a fine flour-like texture.
  3. Rinse your quinoa until the water is clear.
  4. Preheat the oven to 180C.
  5. Melt coconut oil in a frying pan on low heat. Add quinoa and gently cook until fragrant.
  6. Add maple syrup and peanut butter to your quinoa mix and cook on low heat until liquid.
  7. Now mix all ingredients together in a big bowl and transfer to a baking dish layer with baking paper.
  8. Using a pizza cutter or a knife, you can do pre-cutting at this stage.
  9. Bake for 20 minutes, remove from the oven and leave to cool.
  10. Wait until your bars are cold before you cut them using a sharp knife.
