Vegan Gyros with Flatbreads and Tzatziki Sauce

  • fresh vegetables (lettuce, cucumber, tomato, onions…)
  • vegan yoghurt 250ml

Method

  1. Place beans, 1tbsp stock, 120ml warm water, 1.5tbsp tomato paste and 1tbsp soya sauce in the blender. Blend until you reach a smooth paste.
  2. In a big mixing bowl, mix gluten flour with garlic, onion, paprika, and chilli powder. Add your bean mixture and knead the dough using your hands until all the vital wheat gluten has combined. Work quickly and do not over-work the dough. Form a loaf shape and leave it to stand for a couple of minutes.
  3. Bring a big pot of water to the boil, lower the heat to the lowest setting. Add 1tbsp stock and place your loaf inside. Boil for about 40 minutes.
  4. In the meantime, make your flatbread. In a big mixing bowl, mix 500g flour with 1 tsp baking powder, 0.5 tsp salt, 300 ml water, and 50 ml olive oil. Form a dough using your hands. Transfer the dough onto a lightly floured surface and work the dough with your hands for about 5 minutes. Divide the dough into 8 pieces, roll them into balls and place them under a tea towel, leave for 10 minutes.
  5. On a floured surface, roll the balls out into thin rounds. Place them under the tea towel to prevent them from drying out.
  6. Brush your frying pan with a little oil and heat it on a medium heat. Place a flatbread into the frying pan and fry on each side for about 1-2 minutes until browned.
  7. Remove your mixture (seitan) from the boiling pot, place it on a sieve over a bowl or container, and leave to cool. Cut into strips.
  8. Preheat your oven to 180°.
  9. Make your marinade. Mix 0.5 tsp salt, 0.5 tsp smoked paprika, 0.5 tsp cumin powder, 0.5 tsp garlic powder, 0.25 tsp onion powder, 0.5 tsp chilli powder, 1tsp oregano, and a generous pinch of pepper and cinnamon with 3tbsp olive oil, 1 tbsp lemon juice and 2 tsp maple syrup. Add to your cut gyros strips, mix well to make sure it’s coated, and leave for about 15 minutes.
  10. Place the strips on a baking tray (lined with baking paper). Bake for 10 minutes, turn around and bake for a further 10 minutes.
  11. In the meantime, make your tzatziki sauce. Grate your cucumber over a sieve and leave it to drain to remove excess liquid. In a small bowl, mix your vegan yoghurt with drained cucumber, 1 tsp garlic powder, 1 tsp lemon juice, 1 tbsp olive oil, 0.5 tsp salt, and a generous pinch of pepper. Mix well.
  12. To serve your gryos, place 1 tbsp of your tzatziki on a flatbread, layer some fresh vegetables and your baked gyros strips, roll and enjoy!
