Red Lentil Tofu

  • 8 cups water (2L) + more for soaking

Method

  1. Rinse your lentils well. Place them in a big bowl cover them with water, place in the fridge and soak overnight.
  2. Drain the lentils and rinse well.
  3. Add lentils to a big saucepan and pour 4 cups of boiling water on top, mix well. Cover and leave to cool. Blend using a blender until super smooth and creamy.
  4. Place your saucepan over low heat, add salt and mix well. Add 4 more cups of water and bring to boil. Cook for further 15 minutes stirring continuously.
  5. Pour your tofu mixture into smaller containers and leave to cool. Place in the fridge overnight.
  6. Remove from the fridge, slice and enjoy!
