Organic Pumpkin Seeds 1kg (Sussex Wholefoods)
 ½ cup green pumpkin seeds
Organic Tunisian Extra Virgin Olive Oil 1L (Clearspring)
¼ cup olive oil
Organic Cider Vinegar with the Mother 500ml (Biona)
1 tbsp apple cider vinegar
Mediterranean Sea Salt Fine 1kg (Sussex Wholefoods)
1 tsp sea salt
Organic Black Pepper Powder 100g (Sussex Wholefoods)
1/4 tsp black pepper
Other Ingredients
- ½ cup fresh parsley
- loosely packed ½ cup fresh basil
- 1-2 garlic cloves,
- ¼ cup water (add more if too thick)
Method
- Give your fresh herbs a thorough wash and pat them dry. There’s no need to finely chop them since the blender will do the heavy lifting, but discarding any overly thick, woody stems will yield a smoother finish.
- Peel your garlic clove.
- Place all ingredients in a blender.
- Secure the lid and blend on high speed for about 30 to 60 seconds.
- Stop the blender, scrape down the sides of the jar with a spatula to ensure no stray pumpkin seeds or herb leaves are left behind, and blend again for another 15 seconds until the mixture is completely uniform, vibrant green and creamy.
- If the mixture is too thick to drizzle, add cold water 1 tablespoon at a time with the motor running until it reaches your desired consistency.
- Use immediately to coat crunchy salad greens, drizzle over roasted vegetables, or use as a dip.
