Protein Lentil Salad

  • This delicious and protein-packed salad is packed with tasty vegetables and covered in fragrant dressing.
  • It makes a fantastic side salad or light lunch.
  • Tastes wonderful garnished with yoghurt and served with pita bread.
  • Vegan & gluten-free.

Other Ingredients

  • 2 medium-sized carrots
  • 2 celery sticks
  • 1 small red onion
  • fresh mint – to taste
  • fresh dill – to taste

Method

  • Rinse lentils well and drain. Place in a pot, and add water in a 1:2 ratio (lentils to water). Bring to a boil, then turn down the heat to medium and cook until lentils are tender but not mushy. Leave to cool
  • Chop your vegetables and shred the carrots.
  • Combine the cooked lentils, carrots, red onion, celery, raisins, nuts and seeds in a big salad bowl.
  • In a small bowl, mix olive oil, maple syrup, lemon juice and spices, mix well.
  • Add your dressing to the big salad bowl with lentils, add chopped herbs and mix well.
  • Garnish with your favourite yoghurt and serve with pita bread.
