Oat Fruit Bars

  • These easy-to-make oat berry bars are naturally gluten-free, sweetened with coconut sugar and maple syrup, vegan and extra delicious!
  • You can swap strawberries for any fruit jam of your liking (we recommend less sweet ones like strawberry, raspberry, blueberry etc….).
  • These bars take about 10 minutes to prepare + 25 for baking.

Method

  1. Preheat oven to 180°C.
  2. Layer a medium size baking pan with baking paper.
  3. Crumble your strawberries in a small mixing bowl. Add 75ml water and leave to stand for 10 minutes. You want a jam-like consistency – if it’s too thick, add a little bit more water.
  4. Place 150g oats in a blender or food processor and blend until you get fine powder – oat flour.
  5. Mix all ingredients in a large bowl, except for freeze-dried strawberries.
  6. Press ⅔ of your oat mixture into the baking pan and spread your strawberries on top evenly.
  7. Using your fingers, crumble the remaining ⅓ of the oat mixture on top of your strawberries. Gently press using your fingers or a spatula.
  8. Place in the oven and bake for 25 minutes until lightly browned.
  9. Cool, cut and enjoy!
