  • 370ml boiling water 

Method

  1. Place your flaxseeds in a blender and blend until they’re a very fine powder.
  2. Bring water to a boil in a non-stick pan, then lower to a gentle simmer. Add spices if using.
  3. Add ground flaxseeds into the simmering water. Cook for 2-4 minutes, stirring, until a soft, sticky dough ball forms.
  4. Transfer the dough to a glass bowl, cover with cling film and leave to stand for 20 minutes.
  5. Place half the dough between two large pieces of parchment paper on your counter.
  6. Roll dough thinly with a rolling pin. If it cracks, patch it up and keep rolling.
  7. Peel off the top paper. Shape your tortillas using a knife (you can use a plate as a guide to make an even circle shape).
  8. Heat a non-stick pan. Flip a tortilla into the pan, peel off the paper, and cook 2-3 minutes per side until dry.
  9. Fill with your favourite toppings and enjoy!
