Organic Black Beans in Water 400g (Biona)
1 Tin Black Beans
Organic Lime Juice 200ml (Biona)
1tbsp Lime Juice
Organic Italian Extra Virgin Olive Oil 500ml (Biona)
2tbsp Olive Oil
Organic Garlic Granules 100g (Sussex Wholefoods)
½ tsp garlic granules
Organic Sweetcorn 350g (Biona)
70g Sweetcorn
Buckwud Canadian Maple Syrup 250g (Rowse)
1 tbsp Maple Syrup
Other Ingredients
- chopped red onion
- chopped red chilli
- feta cheese
- fresh mint
- fresh coriander
- fresh parsley
- avocado
Method
- Drain and thoroughly rinse one tin of black beans.
- In a small bowl, whisk together 1 tbsp of lime juice, 2 tbsp of olive oil, 1 tbsp maple syrup, ½ tsp of garlic granules and ½ tsp of salt.
- In a large bowl, combine the beans with chopped red onion, chilli, fresh mint, coriander, parsley and sweet corn.
- Pour the prepared dressing over the mix and toss gently to combine everything well.
- If desired, crumble some feta cheese over the top before serving. Garnish with avocado and fresh herbs. Enjoy immediately!
