Other Ingredients

  • chopped red onion
  • chopped red chilli
  • feta cheese
  • fresh mint
  • fresh coriander
  • fresh parsley
  • avocado

Method

  1. Drain and thoroughly rinse one tin of black beans.
  2. In a small bowl, whisk together 1 tbsp of lime juice, 2 tbsp of olive oil, 1 tbsp maple syrup, ½ tsp of garlic granules and ½ tsp of salt.
  3. In a large bowl, combine the beans with chopped red onion, chilli, fresh mint, coriander, parsley and sweet corn.
  4. Pour the prepared dressing over the mix and toss gently to combine everything well.
  5. If desired, crumble some feta cheese over the top before serving. Garnish with avocado and fresh herbs. Enjoy immediately!
