Festive Florentines

  • 1tsp fresh lemon zest

Method

  1. Preheat oven to 170C.
  2. Place raisins and cranberries in a bowl, cover with boiling water and soak for 10 minutes. Drain and set aside.
  3. Chop your almonds and glace cherries into small pieces.
  4. In a small pan, melt the margarine, coconut sugar and maple syrup.
  5. In a mixing bowl, combine the nuts, lemon zest, cherries, raisins and cranberries. Add the flour and mix well.
  6. Combine nut mix with melted sugar & margarine and mix well.
  7. Scoop 1tbsp-size cookies of the mix onto the baking tray layered with baking paper. Bake for 7-10 minutes (until golden).
  8. Remove from the oven and leave to cool on the baking tray.
  9. Melt your chocolate chips in a bowl over a saucepan with boiling water. Dip one side of each florentine in the melted chocolate, place on the baking paper and leave to cool
