Crispy Rice Flour Tempura

Other Ingredients

  • Veg of your choice (try courgettes, aubergine, mushrooms, spring onion, peppers, potato slices, etc.)
  • Soda water.
  • Oil for deep-frying.

Method

  1. Prepare your vegetables by chopping into strips.
  2. Heat the oil in a large pan – 180 degrees is the ideal temperature.
  3. Mix the rice flour and salt with about two-thirds of its volume in soda water (the bubbles in the liquid will make the tempura even lighter and crispier).
  4. Once oil is hot, dredge the vegetable strips in the batter and place carefully into the oil, taking care not to overcrowd the pan.
  5. When tempura is cooked, remove with a slotted spoon, drain on kitchen paper and keep warm in a pre-heated oven until they’re all done.
  6. Serve and enjoy!
