Christmas Pudding

Other Ingredients

  • 5tbsp brandy or rum
  • zest and juice of 1 orange
  • 1 medium apple
  • water

Method

  1. Mix the raisins, cranberries, chopped dates and apricots in a big mixing bowl. Add in rum or brandy, and orange zest and juice. Mix it well and leave to soak overnight.
  2. Mix 1tbsp ground flax with 4tbsp water and set aside. Add in peeled and grated apple, flour, baking powder, breadcrumbs, coconut sugar and spiced and mix well.
  3. Add flax mix, melted vegan margarine, oat drink and chopped almonds. Mix well.
  4. Grease a bowl with some vegan margarine (you can layer it with baking paper to prevent it from sticking).
  5. Pour your pudding mix into the mould and press it down firmly and smooth the top. Leave a little gap at the top.
  6. Cover the bowl with a double layer of baking paper and a layer of aluminium foil. Secure it with string or a rubber band.
  7. Place a heatproof saucer or trivet in the bottom of a large saucepan. Set the pudding bowl on top. Fill the saucepan with enough boiling water to come halfway up the sides of the pudding basin.
  8. Cover the saucepan with a lid and simmer gently for 4-5 hours. Check the water level occasionally and top it up with boiling water as needed.
  9. Once the pudding is steamed, remove it from the saucepan and allow it to cool. You can store it in a cool, dark place until Christmas day and feed it a little brandy every 10 days.
  10. On Christmas day, reheat the pudding by steaming it for another 2 hours or until heated through.
  11. To serve, remove the parchment paper and foil, place a plate over the top of the bowl, and carefully invert the pudding onto the plate.
  12. Serve your vegan Christmas pudding with vegan custard or brandy sauce for a festive and delicious treat.
