Refried Black Beans and Rice

Other Ingredients

  • 1 medium-sized onion
  • 2 garlic cloves
  • Some jarred jalapenos (to taste)
  • 1 carrot (optional)
  • 1 celery stalk (optional)
  • 1 medium-sized tomato (optional)


  1. To make refried beans, heat 1tbsp of olive oil in a saucepan over a medium heat.
  2. Gently fry onions & garlic, add carrots and celery (if you’re using any) and cook for 5 minutes.
  3. Add jalapeños, tomatoes, spices, bouillon powder, 100ml water and beans, mix well, cover and simmer for 10-15 minutes.
  4. Gently mash the beans until you reach desired consistency.
  5. Taste and season and add more water if needs be.
  6. Serve over rice and garnish with fresh herbs and lime.
