Vegan Chilli with Walnuts

Ingredients

  Mixed Beans in Water, Organic 400g (Biona)
1 tin mixed beans

  Chopped Tomatoes, Organic 400g (Mr Organic)
1 tin chopped tomatoes

  Organic Walnuts (500g) - Sussex WholeFoods
a handful of walnuts

  Tomato Puree, Organic 200g (Biona)
1 tbsp tomato puree

  Rapeseed Oil, Organic 750ml (Mr Organic)
2 tbsp rapeseed oil

  Shoyu Soya Sauce, Organic 150ml (Clearspring)
1 tbsp soya sauce

  Balsamic Vinegar, Organic 350ml (Aspall)
1 tbsp balsamic vinegar

  Organic Coconut Sugar (1kg) - Sussex Wholefoods
1 tsp coconut sugar

  Organic Cumin Powder 100g (Sussex Wholefoods)
0.5 tsp cumin powder

  Hampshire Foods Cayenne Pepper 100g
1 tsp cayenne pepper

  Organic Paprika 100g (Sussex Wholefoods)
1 tsp paprika powder

  Hampshire Foods Spanish Smoked Paprika 50g
0.5 tsp smoked paprika

  Organic Ceylon Cinnamon Powder (100g) - Sussex Wholefoods
0.25 tsp cinnamon powder

  Organic Raw Cacao Powder 1kg (Sussex Wholefoods)
0.25 tsp cacao powder

  Vegetable Bouillon Powder, Organic 900g (Marigold)
1 tsp vegan bouillon powder (optional)

  Profusion Himalayan Rose Pink Salt - fine 500g
salt to taste

  Black Pepper Powder 100g (Hampshire Foods)
pepper to taste

Other Ingredients

  • 2 celery sticks.
  • 1 onion.
  • 1 peppper.
  • 1 carrot.
  • Half a medium courgette.
  • 2 cloves garlic.
  • coriander, lime & avocado - to serve.

Method

  1. Chop your vegetables. Heat the oil in a large pot over medium heat. Add the onion and garlic and cook for around 3 minutes. Add in the celery sticks, carrot, courgette & pepper, cook for around 5 minutes.
  2. Add in the spices and coconut sugar and cook until fragrant. Stir in tomatoes, tomato puree, balsamic vinegar, soya sauce and bouillon powder (if you're using one), cover the pot and cook for around 15 minutes stirring regularly.
  3. Add in cacao powder, beans & chopped walnuts and cook for around 5 minutes.
  4. Serve with avocado, lime, coriander and rice.
