Tigernut, Pear & Chestnut Salad

  • This enchanting salad is perfect for a light lunch, and combines the ancient superfood Tiger Nuts with the lovely flavour of organic chestnuts and the sweetness of a fresh pear.
  • Like Waldorf Salad but with added superfood appeal!
  • A delightful mix of textures and sweet/savoury.
  • Will keep for 3 days in the fridge.

Other Ingredients

  • 1 medium-sized pear (choose a firm variety).

Method

  1. Soak the tiger nuts for at least 6 hours (preferably overnight) in plenty of cold water.
  2. Drain and chop them roughly.
  3. Roughly chop the chestnuts.
  4. Core and dice the pear, keeping the skin on.
  5. Add a large dessert spoon of the mayonnaise to the tiger nut, chestnut and pear mixture and combine gently but thoroughly.
  6. Serve and enjoy!
